Tarte au citron meringuée

Ingrédients
Pâte Sablée :
120 g de farine
205 g de beurre
100 g de sucre
1 jaune d'œuf
sel
Crème :
2 jaunes d'œufs
1 oeuf
100 g de sucre en poudre
2 Citrons
20 g de beurre
Meringue :
3 blancs d'oeufs
50 g de sucre
Préparation
Verser la farine sur la table, ajouter 125 g de beurre ramolli et malaxer afin
d'obtenir un mélange homogène. Faire un puits, y ajouter du sel, le jaune d'œuf, le sucre et mélanger en versant l'eau petit à petit.
Laisser reposer la boule de pâte pendant 30 minutes.
Préchauffer le four (Th. 7 ou 180-200 °C). Beurrer un moule à tarte. Abaisser la pâte au rouleau et en garnir le moule. Piquer la pâte à la fourchette et la mettre au four environ 7 à 10 minutes.
Dans un saladier, blanchir les jaunes d'oeufs avec le sucre. Ajouter l'oeuf entier et le beure fondu. Battre jusqu'à émulsion complète. Verser le jus de citron.
Mélanger puis verser la préparation sur la pâte. Remettre au four 25 minutes.
Monter les blancs en neige et y incorporer peu à peu le sucre.
En couvrir la tarte puis remettre au four (Th. 5) pendant 7 à 10 minutes pour
faire dorer la meringue.

je n'est pas fait cette recette mais je suis pâtissier et il me semble qu'il faudrait plutôt 205g de farine et 120g de beurre et non l'inverse car sinon ça risque d'être un peu gras et de pas mal dégouliner au four

Un vrai delice !!!!!!
La tarte au citron est un vrai delice, et cette recette est assez simple ce qui permet de realiser un bon dessert sans etre la reine de la patisserie

En fait pour l'eau c a toi de juger, en gros 5cl c pas mal.
Sinon pour la pâte sablée, pour qu'elle soit un peu plus facile a étaler et moins sèche moi je mes 120g de beurre et 150-160g de farine a peu près.

c'est une pâte sablée donc on ne mets pas d'eau. sinon c'est un mélange. on met de l'eau dans la pâte feuilleté et brisé mais surtout pas la sablé.
